Recipe: Oats and Beetroot Dosa *Toddler Approved*

This dish was introduced in my kitchen for Ishanvi but overtime, we liked to eat her leftovers so much that we decided to make it for family dinners. It is nutritious, can be instantly made and tastes so good, that you might want to name your kids beetroot. Just kidding.
Just try it and find out for yourself.

Ingredients:
1 beetroot grated
1 medium sized capsicum grated/finely c
hopped
1 medium sized onion grated
/finely chopped
handful of cilantro finely chopped
2 green chillies finely chopped or ground in a paste
2 cups oats ground in a powder
Yogurt 2 cups
Salt as per taste

Method:
Mix all the ingredients together and add water if needed to make the consistency of the batter similar to dosa batter. Heat a pan, and start spreading the batter in small round shapes. It doesn't spread as easily as the regular dosa batter, so be patient and gentle.

Make sure you make small sized dosas, as they are easier to flip. Pat/spray oil or ghee on the dosa while they are cooking. Once you feel they are cooked well, flip them carefully and cook on the other side.

Cook well and remove in a serving dish. Can be eaten with chutney, ketchup or just as is. If you want the batter to spread easily and the dosas to flip better, you can add, 2 tbsp fine rawa to the batter.
But I love these dosas without the rawa as the texture achieved is really soft and yummy.

P.S. I want to thank my friend Priyanka for sharing this recipe with me. She shared this recipe with me at a time, when Ishanvi was going t
hrough a I hate food phase, and this recipe helped break the jinx.
